Philippe Pacalet, is a legendary figure in Burgundy's natural wine scene, who was trained by his uncle, Marcel Lapierre from 1985 to 1991. Notably, from 1991 to 2001, Philippe was entrusted by Henry-Frédéric Roch with vinification at Domaine Prieuré Roch, building an impeccable reputation.
In 2001, Philippe moved to Beaune to establish his own name. Confronted with the reality of Burgundy land values, he opted to rent parcels in Chablis, Côte de Beaune, and Côte de Nuits. Today, he farms 10 hectares, producing about 50,000 bottles annually. His winemaking involves whole bunches, no added sulfur, and long barrel aging, showcasing his dedication to expressing each terroir with precision and artisanal methods - even bottling by hand.
