Today, Dominique Laurent operates in a newly constructed building on the outskirts of Gilly-les-Citeaux with a view of Vosne-Romanée. Dominique Laurent is a increasingly renowned figure in Burgundy, who abandoned his profession as a pastry chef many years ago to, as he puts it, produce Burgundy wines that come alive.
He has achieved cult status today, though one might not sense it upon entering the new building in the small industrial area where the bottles are labeled and packed. There is nothing solemn about the building, location, or the staff, but instead, there is warmth and a love for wine that is felt throughout. Laurent's mantra is authenticity, which he brings to life by creating Burgundy wines from old vines with very low yields.
He allows the wines to age in barrels for a long time with sediment. He personally sources the wood for the barrels from the Cîteaux forests, which form the backbone of the wines, explaining why a large percentage of the barrels are of new oak. The process is old-fashioned and extremely meticulous, allowing the wines to express the vast range of terroir found in different areas of Burgundy. Consequently, the production is small, and the prices are high, but the wines speak for themselves in a very literal sense.
