Critics have rated Chablis 1er Cru Butteaux as the best available among Chablis 1er Cru wines.
Butteaux is the southernmost of three Premier Cru climats that make up the wider Chablis Montmains Premier Cru umbrella title. Butteaux's steep slope and its limestone-rich soils mark it out as a high-performing terroir. Chardonnay-based wines from Butteaux tend to be powerful and steely, with subtle characters of stonefruit and apple.
Vinification:
- Vine age 45 years in average.
- Harvested by hand.
- Grapes pressed gently by pneumatic press.
- Juice is left to settle, and then racked off its lees into cuve to ferment.
- Alcoholic fermentation takes two weeks, followed by a malolactic fermentation in cuve.
- Wines are racked into older oak barrel and feuillette (most of which comes from barrel-maker Chassin), of which a very small percentage is new, where they age for 18 months.
