Chablis 1er Cru La Forêt. 
Forets (alternatively titled La Forest or La Forêt) is a Premier Cru climat on the western side of the Serein river in Chablis. Located on a south-facing hill of high-quality Kimmeridgian soils just a few miles southwest of Chablis town, Forêts produces elegant, steely wines from the Chardonnay grape variety.
The vineyard is the central one of three adjacent vineyards that come under the 118 hectare Montmains Premier Cru name and lies between Butteaux and Montmains itself.
 
Vinification:
Vine age 15 years in average.
Harvested by hand.
Grapes pressed gently by pneumatic press.
Juice is left to settle, and then racked off its lees into cuve to ferment.
Alcoholic fermentation takes two weeks, followed by a malolactic fermentation in cuve.
Wines are racked into older oak barrel and feuillette (most of which comes from barrel-maker Chassin), of which a very small percentage is new, where they age for 18 months.
