2021 Philippe Pacalet Ladoix Village Rouge.
The old vines that Pacalet harvests from in Ladoix provide the fruit needed to reach his village-level quality. The grapes are sourced from Champs Pussuet, a lieu-dit near Clos de Langres. The wine is mainly fermented using whole clusters, with no sulfur added. This results in a relatively deep ruby-red color and an expressive aroma with subtly spiced notes of dark plums and forest floor. It is clear that the low yield from the old vines contributes to the concentration and pure, transparent expression of the intriguing Ladoix terroir, which is strongly reflected in the taste. The aromas from the nose are echoed, and a juicy, flavorful sensation spreads across the palate.
