This small Burgundy estate in Gevrey-Chambertin, now covering just 4 hectares, has been expertly managed by Denis Bachelet since 1983. Known for his natural talent in crafting pure, elegant wines, Denis embodies the principle "finesse before all things" in every bottle he produces.
Born in 1963 in Spy, Belgium, Denis spent his childhood summers in Gevrey, where he fell in love with winemaking. After his grandfather’s death, Denis took over the domaine, immediately showing his skill with a remarkable vintage that same year.
Denis believes that great wine starts in the vineyard. He meticulously controls yields and ensures rigorous grape selection, using a vibrating sorting table since 2003. The grapes are 100% destemmed and crushed to enhance color extraction. After a cool pre-fermentation maceration, natural yeast fermentation begins. Once fermentation is complete, the wine is pressed, settled in tanks for a week, and then transferred to barrels, with about one-third new oak for Gevrey Chambertin and 50% for the crus. Denis practices straightforward, intuitive winemaking, adapting as needed.
